The paddle-type dough mixer is designed to prepare dough for the production of bagels, gingerbread products, pelmeni, vareniki, chebureks, and other culinary products. The machine body is made of high-quality stainless steel. The unique design allows you to easily replace the main structural units of the device. The mixing process is carried out in such dough mixers under negative pressure in vacuum conditions, thus, moisture absorption of vegetable proteins occurs faster than when kneading in the usual way. A special mixing method in these dough mixers allows you to achieve an excellent gluten structure, the dough is smooth with a soft yellowish tint. Unloading of the finished dough is carried out by turning the bowl up to 180 °. The PLC controller is responsible for control, adjustments are made via the electronic control panel, on these devices it is possible to adjust the kneading time and the degree of vacuum according to the recipe requirements.
